Samgyeopsal became especially popular in South Korea during the late 20th century partly because pork belly was one of the more affordable cuts of meat at the time. Over the years, it evolved from a simple working-class meal into a staple of Korean dining culture, with entire restaurants and even “samgyeopsal days” dedicated to celebrating it.
