Cheesecake is one of the oldest desserts known: ancient Greeks enjoyed a simple version made with fresh cheese, honey, and wheat. The creamy, rich version we know today didn’t really take shape until the 18th century, and New York-style cheesecake became famous for using cream cheese, giving it that iconic dense and smooth texture.
